Soaking up the smell at Phillippa’s

I was one of those kids that as soon as I turned 14 and 9 months, I got a job. I remember counting down to the day – a job represented freedom. Freedom from having to ask mum for money all the time, and the possibility of being rejected, leaving my teenage self poor. I had my eye on a stereo for my bedroom – this was the way to get it.

The local bakery was hiring. I got the job. And then stayed there for almost 5 years, until I got a grown up job. That stereo got me through a lot of teenage angst moments.

The smell of the bread, early in the mornings, just as it was coming out of the ovens was something I won’t ever forget. It’s a warm comforting smell; wrapping around you and somehow making me feel simultaneously hungry and yet, satisfied.

It always amazes me the power that smells have – bringing such intense feelings and vivid memories with every sniff.

So when the opportunity came up to have a look at the back stage operations of the Melbourne bakery institution, Phillippa’s, how could I pass it up?

And even better, I was a tag along with some friends – so it was a bit of a laugh too!

The operations were a bit bigger than what I had been exposed to before, all fancy ovens and massive mixers. It’s a tight operation back there; I never guessed how much science goes into making that sourdough just right.
